Ingredient Crêpe:
♦  80g All Purpose flour
♦  1 Eggs
♦  1/2 teaspoon salt
♦  1 teaspoon apito yam paste
♦  130ml milk
♦  25g butter, melted
♦  Durian Fillings:
♦  Pauls thickened Cream 170g
♦  15g caster sugar
♦  5-8 D101 Durians


Method:
1.  把全部crepe 材料混合并搅拌均匀。

2.  过滤并静置1小时。

3.  取一24cm不粘平底锅烧热,搽少许牛油或粟米油

4.  用勺子舀取面糊,以最快的速度轻轻摆动平底锅,让面糊可以薄薄地布满一个圈,用中小火慢慢煎再翻面,一片片煎至面糊完为止

5.  待crepe 冷却当儿,把奶油霜和幼糖打发。

6.  舀取1-2汤匙奶油霜放crepe 皮中间,接着放入适量榴莲肉,再舀入适量奶油霜。

7.  包起,冷藏2-3小时定型。
