♦ 素肉(也可改為豆腐或腐竹结)

1. 大火下油爆香薑,蒜至金黄后加入已切细之茄子,红菜头,榨菜丝,素肉,盐,再洒小许水,盖上锅盖约5分鐘至熟透即完成。
(如改用豆腐,请先用小许盐腌好巳切细之豆腐,再用小许油煎香至金黄后备用)
