材料:

A :
♦  1)糯米 250g
♦  2)椰浆 150g
♦  3)盐 1/4茶匙
♦  4)pandan叶子数片

B :
♦  1)鸡蛋 1粒
♦  2)南瓜泥 150g(去皮,蒸熟,再用搅拌机和清水,椰浆一起打至幼滑)
♦  3)低筋面粉 50g
♦  4)Heow Kew Flour 20g
♦  5)沾米粉 2汤匙
♦  6)细砂糖 100g
♦  7)椰浆 100g
♦  8)清水 50g
♦  9)盐 1g(比1/4茶匙少一点)

做法:
1.  糯米可以隔夜预先浸泡!

2.  再洗净沥干水份!

3.  放入蒸盘内,椰浆和盐搅拌均匀后,pandan叶子一起加入!

4.  大火蒸大约30分钟至松软的糯米饭即可!

5.  把蒸好的糯米饭,倒入6寸四方蒸盘里,再用饭舀压紧和压平,备用!

7.  准一个大碗,把材料B一起搅拌均匀至无可粒金瓜糊,过滤后!

8.  热不粘锅,小火把金瓜糊下锅,煮至比较浓稠一点(就像煮kaya一样)

9.  煮比较浓稠后,倒入糯米饭上面,铺平后!

10.  大火蒸20分钟,至金瓜熟即可,待完全冷却才可以切割,而且最好用塑胶刀子切割!

主厨碎碎念 :
♥  小火煮金瓜糊,记得要不时搅拌,煮到有一点浓稠就可以了!

♥  完全冷却后,可以在案板上铺上一层塑胶袋或者保鲜膜,再糕的四周围,用塑胶刀子画一圈!

♥  再倒扣,慢慢拉出糕,再用塑胶刀子慢慢刮出来!记得做好的糕不要吹风,不然会变硬哦!

♥  主厨蒸糯米饭不是跟着原食谱,不过,原食谱经过询问做过无数糕点的达人确实没问题!

主厨的糯米饭偷小步:
♥  糯米浸泡1小时,牛头牌万能锅糙米功能,糯米250g,椰浆200g加清水50g一起煲饭,就行啦!一样松软好吃!
