份量~6寸活底模（外层以锡纸包好，以防进水） A： ♦玉米油 40g ♦低筋面粉/特幼面粉 50g（过筛） B： ♦蛋黄 3个 ♦全蛋 1个（净秤50g-55g） ♦鲜橙汁 50g ♦橙皮削 1粒橙的份量 ♦盐 1小匙 C： ♦蛋白 3个 ♦幼糖 40g 1. 将材料B拌均备用。 2. 将材料A的玉米油加热至看到纹路后离火，倒入低筋面粉拌至光滑的烫面糊，待微凉后把材料B分次边倒入边拌至顺滑。 3. 将材料C的幼糖分3次加入蛋白打至湿性发泡，取1/3的蛋白霜拌入蛋黄糊里，再倒回剩余的蛋白霜里翻拌均匀。 4. 倒入模后轻敲以震出气泡，放入已预热烤箱最底层，以水浴法上火120度烤10分钟，然后转上下火130度烤70分钟。（时间与温度都只供参考） 5. 烤完后把烤箱门开个小缝，呆个10分钟才把蛋糕取出。无须倒扣，蛋糕冷却后会稍微离模，轻轻往底部一推即可脱模。

♦ 低筋面粉-170g ♦ 可可粉-4大勺 ♦ 牛油-120g ♦ 糖粉或细砂糖-160g ♦ 鸡蛋-100g(约2粒） ♦ 牛奶-160ml ♦ 盐-1/8茶匙 ♦ 泡打粉-1茶匙 ♦ 苏打粉-1/2茶匙 1. 把低筋面粉，可可粉，泡打粉和苏打粉一起混合过筛，备用。 2. 牛油软化后，用打蛋器稍微打发（表面光滑，略微发白，体积稍变大），加入糖粉拌匀。 3. 分5次加入打散的蛋液，并搅拌均匀。每一次都要使鸡蛋和牛油完全融合后才再加下一次。搅拌均匀后的样子是细腻光滑，不出现蛋油分离的。 4. 倒入牛奶（不需要搅拌）,再倒入混合过筛的面粉。 5. 用橡皮刮刀轻轻翻拌均匀，至光滑无颗粒。 6. 把拌好的面糊倒入（大的纸杯）1/2-2/3满，放入预热好的烤箱以180C°，烤大概25-30分钟即可。（请依照各自烤箱温度为准）。
