南乳炸肉焖芋头DSC89-2


♦  三层五花肉
♦  粉芋头
♦  蒜蓉
♦  小葱头（剁碎）
♦  小辣椒（剁碎）
♦  辣椒干（切段）
♦  上海南乳

调味 :
♦  蚝油（少许）
♦  糖（适量）
♦  玫瑰露（少许）
♦  胡椒粉（一点点）
♦  五香粉（少许）

做法

A : 处理芋头
1.  芋头削皮洗净，切片

2.  放入热油中炸至半熟

3.  盛起沥油备用

B : 南乳炸肉
1.  洗净三层五花肉，切小块。

2.  准备一个碗。

3.  放入一大块上海南乳，加入调味料。

4.  洗干净手，用手抓拌至肉块酱料完全均匀及吸收，放一旁稍腌大概15分钟

5.  放入热油中用大火炸至酥嫩备用 【这步骤要特别注意，过程要留意火候随时按情况调适，不然炸肉很容易炸焦或过熟】。

6.  过滤炸油备用。

C  ：焖煮
1.  备一个碗，放入一块南乳，加入调味料（和炸肉的一样）。

2.  拌均匀备用。

3.  洗净锅，放入适量过滤炸油。爆香蒜蓉、小辣椒和辣椒干。

4.  放入调味料，慢火爆香。

5.  放入芋头轻手翻炒均匀，再加入炸肉轻手翻炒均匀。

6.  倒入适量清水，慢火焖至酱汁收浓及入味即可起锅上碟 【焖煮过程要注意！因为炸过的芋头很容易软绵及黏底，所以焖煮时要特别留意火候及时不时轻手翻炒免焦锅底】。
